It’s September. That month of crazy-cold mornings and warm, hazy-lazy afternoons. The month where you’re either overdressed, underdressed or dress-obsessed. No matter. It’s also the month of back-to-school routine. Lunch bags crowd the countertops, the great Tupperware invasion has begun and the afternoons are a whirlwind of homework and dance (or basketball or piano or swimming) practice.
Let’s face it, the last thing you want to deal with is ‘whipping up’ a healthy meal on the fly. It’s time to dust off the Crock Pot. I love slow cookers. I love them so much I have three. (Well, four if you count the dip-sized one).
Slow cookers scream comfort and this recipe is the epitome of comfort food. A little prep time and then you can kick back with your ten-year-old’s math homework and a
bottle glass of wine while dinner simmers and you look like the rock-star mom (or dad) that you are. Also, little hands will love to help mix up the dumplings so it is a great way to involve the kiddos.
